Welcome: Eggplant Pizza (1pt each)

So for my first post I will share a recipe I created this afternoon.


Eggplant Pizza with Tomatoes and Red Peppers
1 eggplant, sliced into 1/2 in circles
1 cup of diced tomatoes (if using canned try to find them without salt)
1 cup of red bell pepper, diced
1 large garlic clove, whole
2 tsp of olive oil
2 tbsp of freshly grated parmesan cheese
1 tsp of oregano
basil, chopped for garnish
Salt and Pepper to taste


1.) Preheat oven to 400º

2.) Wash and slice eggplant.

3.) Sprinkle about a teaspoon of salt over eggplant, place a paper towel over the eggplant, and then a plate to weigh it down.

4.) When the oven beeps, place eggplant in an oven-proof dish fitted with aluminum foil and drizzle olive oil over eggplant. Cook the eggplant for 15 mins then remove from oven.

5.) In a small sauce pan over medium high heat, combine tomatoes, red peppers, garlic clove (whole), oregano, salt, and pepper.

6.) Bring mixture to a boil and then reduce heat to low. Remove garlic clove.

7.) After the 15 mins that the eggplant has cooked. Spoon mixture over the top of eggplant and top with the freshly grated parmesan cheese. Place in oven to cook for about 8-10 more mins.

8.) Remove from oven and place on a serving dish. Sprinkle the basil over your pizza and serve.
